Description Aligoté is representative for the vineyard, having a yellow greenish colour and rarely straw-yellow. It is best at its youngest, thanks to its fresh, clean and refreshing notes. It is a dry wine and has a moderate hardness and acidity, with a rich earthy, slightly bittery flavour. It is a long time since Aligoté wines from Sarica Niculițel Vineyard have come into prominence and are now internationally known.
Food Pairing Dishes based on white meat, especially fatty fish, and various appetizers.

Vinification
The raw material for this authentic Romanian wine are Fetească Neagra grapes easiness picked from vines placed at the foot of Macin Mountains, in cold mornings of late autumn.
Tasting Notes
The wine is defined by the red colour with purple tints, richly textured bright and vivid cherry and blueberry fruit, spice and dark chocolate.

Description
Merlot is a dry red wine, which flies the flag for Sarica-Niculiţel Vineyard. It has a purple hue, is astringent and tannic, imposing itself by the softness that only the finest wines have. The delicate scent and flavour are reminiscent of those of forest fruits. As it grows older, Merlot develops an aromatic bouquet and persistent aftertaste.
Food Pairing It can be associated with red meat dishes (beef, pork, lamb) or sharp cheeses. Recommended serving temperature: 15-18 ° C.

Description
Muscat Ottonel has an intense, attractive yellow colour, which turns into golden as the wine grows old. It is the grape’s aroma that gives the wine its special Muscat flavour. Processed through directive fermenting, the wine takes all the very best from the grape and conveys to the consumer a lot of strength, sometimes outlined by a pleasant bitter aftertaste.
Rich, balanced, with a pleasant roundness and softness, the wine is easily recognizable between white wines.

Vinification
The grapes were allowed to reach their full maturity before picking. The grapes were crushed and placed in the press. Only the free run juice was used to make this wine. Each grape variety was fermented separately using a wild yeast strain for the first 48 hours of fermentation to give the wine more intensity of flavours and aromas. The Chardonnay was fermented in American oak barrels for seven months before it was blended with the Tamaioasa Romaneasca.
Tasting notes
Pale straw in colour, intense floral aroma with a hint of spice. Full-bodied white wine with complex flavours of floral and fruit with just a hint of oak on the finish giving this wine a lovely round and long finish.

Chicken, seafood, cheese and pasta dishes. Serving temperature: 10 - 12˚C

Vinification
The best parcels were selected to pick these varieties from. Fermentation took place at 26-28* C, for 25 to 30 days in order to extract the tannins and aromas from grape skins. The aging took one year in American oak and afterwards best barrels were selected in order to give this perfect balanced cuvee. Tasting Notes Dark red in colour with aromas of black cherries. A well balanced wine with taste of plums with soft and delicate tannins giving its velvety aftertaste. Food Pairing May be associated with spicy dishes: stakes, grills and matured cheese. Serving Temperature: 18-20˚C.

Vinification The vineyards where this Sauvignon Blanc comes from is situated on the very top of the hills at 400 m above sea level on a north facing vineyard. Here it is slightly cooler than any other part of our vineyards and with soils of sand and limestone which gives this wine some mineralogy. The Sauvignon Blanc grapes are handled very carefully during picking and sorting. Every care is taken to limit the exposure to oxygen during the pressing of the grapes. Only the free run is used to make this wine. Grape must is cooled and allowed to settle for 24 to 48 hours before racking off the sediments. After racking off the sediments, we inoculate with a yeast that will ferment at cold temperatures and will give us good herbaceous characteristics.
The wine is fermented at 10 to 14°C, the fermentation takes up to 4 weeks to complete. After fermentation the wine is left on the yeast lees for one month before we start to do the batonnage (mixing the yeast lees) which gives the wine more structure.
Tasting Notes
Yellow-green color with tropical fruit flavor, guava and passion fruit. It is a well balanced wine with fine acidity, felt pleasant in the mouth palace. Fresh and balanced, with a fruity character standing out on the aftertaste, which makes this wine an ideal company for dishes or a good appetizer.

Chicken, seafood, cheese and pasta dishes. Serving temperature 10 -12ºC.
